Protection of the quality products and particularly Protected Designation of Origin (PDO)/Protected Geographical Indication (PGI) foods is a strategic issue in the EU economy, in terms of protection of market competition and safety. Having reliable tools for the assessment of key parameters useful for the identification of authenticity and/or frauds is therefore of main interest.
