Quality and volatile compounds in red wine at different degrees of dealcoholization by membrane process

This study investigated the effect of different degrees of dealcoholization on volatile compounds, phenols and sensory characteristics of red wine (cv. Montepulciano d’Abruzzo). The wine with an initial alcohol content of 13.2% v/v was partially dealcoholized by membrane process with a decrease of alcohol degree as follows: − 4.9; − 6.3; − 7.8, − 9.2 and − 10.5% v/v.

Characterization of arils juice and peel decoction of fifteen varieties of punica granatum l.: a focus on anthocyanins, ellagitannins and polysaccharides

Pomegranate is receiving renewed commercial and scientific interest, therefore a deeper knowledge of the chemical composition of the fruits of less studied varieties is required. In this work, juices from arils and decoctions from mesocarp plus exocarp were prepared from fifteen varieties. Samples were submitted to High Performance Liquid Chromatography—Diode Array Detector–Mass Spectrometry, spectrophotometric and colorimetric CIEL* a* b* analyses. Antioxidant, antiradical and metal chelating properties, inhibitory activity against tyrosinase and α-amylase enzymes were also evaluated.

Investigation on the influence of spray-drying technology on the quality of Sicilian Nero d’Avola wines

The purpose of the present work was to find a correlation between microencapsulation technology applied to
wines and the resulting quality of the wine itself in terms of volatile composition and phenolic profile. To this

Anti-Candida albicans biofilm activity of extracts from two selected indigenous Algerian plants. Clematis flammula and Fraxinus angustifolia

Candida albicans biofilm is associated with high rates of morbidity and resistance to antifungals. The aim of the present study is to evaluate the anti-Candida albicans biofilm activity of some indigenous Algerian medicinal plant extracts: Clematis flammula and Fraxinus angustifolia and their influence on the virulence factors of C. albicans. The anti-biofilm activity was determined using crystal violet assay while the cell surface hydrophobicity (CSH) was estimated in a water-hydrocarbon two-phase assay.
