The Restoration discipline is confronted daily with the «material» and «appearance» of the architectural monument. In this sense, the pale lime mortar, the 'lime white' used as a surface finishing method, has a strong ‘identifying’ character that can be found in many historical centers of Valle d’Itria. Detectable yet in the Preclassic Age, this finishing technique had a long duration over the centuries and continued to be carried out during the periods of Greek, Roman, Longobard-Byzantine, Norman, Angevin-Aragonese and Bourbon domination.
