The Restoration discipline is confronted daily with the «material» and «appearance» of the architectural monument. In this sense, the pale lime mortar, the 'lime white' used as a surface finishing method, has a strong ‘identifying’ character that can be found in many historical centers of Valle d’Itria. Detectable yet in the Preclassic Age, this finishing technique had a long duration over the centuries and continued to be carried out during the periods of Greek, Roman, Longobard-Byzantine, Norman, Angevin-Aragonese and Bourbon domination. It therefore represents a historical character of the technical-constructive and traditional culture of the Murgia of the trulli, it is still today an eco-sustainable, environmentally friendly, natural, antiallergic, hygienic-sanitary finishing treatment and its conservation appears necessary in every intervention on the monumental heritage of the area referred to.
