Le ricerche alle quali il gruppo di ricerca si applica comprendono l'uso di metodi chimici applicati alla caratterizzazione degli alimenti ai fini di assicurare qualità e sicurezza.

In particolare metodi spettroscopici, basati sulla Spettroscopia di Risonanza Magnetica Nucleare, sono applicati per lo studio della metabolomica e per il fingerprinting utile a garantire l'autenticità dei prodotti.

The research activity of FoodChemLab is mainly focused on the study of food and natural matrices carried out using Nuclear Magnetic Resonance (NMR) methodologies. Together with her research group, prof. Luisa Mannina has developed an analytical protocol for the determination of the metabolic profile of the investigated matrices by means of high-field NMR spectroscopy and, according to the specific problem, chemometric analysis.

Selective electrochemical determination of caffeine at a gold-chitosan nanocomposite sensor: may little change on nanocomposites synthesis affect selectivity?

A simple and selective method for the determination of caffeine also in complex matrix has been developed at a gold electrode modified with gold nanoparticles (AuNPs) synthetized in a chitosan matrix in the presence of oxalic acid.
