Interessi di ricerca

-Food Chemistry: sviluppo e convalida di metodiche analitiche per la caratterizzazione chimicofisica
delle merci e la determinazione di marker molecolari in matrici alimentari e ambientali,
coadiuvati da analisi multivariata (PCA, HCA, LDA, QDA, kNN, Naive Bayes, PLS-DA) e
pianificazione sperimentale (DOE).
- New Technologies: Applicazione di nuove tecnologie sostenibili per la qualità e sicurezza
alimentare. In particolare, applicazione di nanoparticelle di metalli nobili e sensori per
determinazioni rapide e sostenibili.
- Sostenibilità ambientale ed economica: valutazione della sostenibilità di prodotti, processi e
servizi tramite il Life Cycle Assessment (LCA). Valutazione e calcolo di Carbon Footprint, Water
Footprint, Cumulative Energy Demand .
