Interessi di ricerca

L’attività  di ricerca  della prof. Luisa Mannina è rivolta allo studio di alimenti e fluidi biologici effettuato mediante metodologie di Risonanza Magnetica Nucleare. Insieme al suo gruppo di ricerca (Laboratorio di Chimica degli Alimenti) ha sviluppato un protocollo analitico che prevede la determinazione del profilo metabolico delle matrici in esame tramite spettroscopia NMR ad alto campo e, se il problema lo richiede, la sua elaborazione tramite appropriata analisi chemiometrica. L'applicazione di questo protocollo ha permesso di avere diverse informazioni sull'origine geografica, varietà, genuinità, tipo di coltivazione di una vasta gamma di alimenti quali oli di oliva, kiwi, pesche, mirtilli, mele, tè, miele, spigola, farine, zafferano e birre e di sostanze naturali. La sua attività ha riguardato anche lo studio metabolomico-NMR dei fluidi biologici per rilevare marcatori di regimi dietetici personalizzati o di stati patologici. L’attività scientifica è comprovata da pubblicazioni su riviste internazionali, pubblicazioni su riviste nazionali, capitoli di libri, presentazioni (plenary e invited lectures), comunicazioni, posters e lavori presentati a congressi nazionali ed internazionali. Ha collaborazioni scientifiche con ricercatori di università e centri di ricerca europei.
